Putting a set of gt600r turbos on a stock motor. Should I be looking at re torquing a the heads? I didn't think to check it when I had the engine out.

Heads lift as the headbolts stretch due to them not being strong enough, nothing to do with torque settings. Know it happens on RB30's but those were never really designed to cop huge amounts of boost. You will be fine with GT28r's. If you ever have to remove the head replace with ARP studs or new OEM headbolts.
