that tyre will fit on the stock 7.5" rim, but you'll have some side wall bulge going on. And in turn, possibly worsen handling than the recommended 225 or 235 tyre on them.

Stockies are 7.5" wide, I wouldn't go bigger than 235... you need something around a 9" wheel to fit 255s nicely.

run the standard width of 225/50. anymore and it will handle worse because you're essentially running a oversized tyre on a skinny wheel and it will flop around like jelly.

I've been running these for the past 2 yrs now and have done 2 GOR's and a few hoons up Arthurs Seat and they're great!

There's very minimal Tyre wall bulge and handling is great.
I should add that I have AGX Dampener Adjust shocks and Kings lowered springs... so I'm not sure how it would be on a stock set up.

When I get to the edge of the handling envelope there's some slight "mushing" of the rear end before it starts to give then I back off a touch.

    Wrong.
speedo will only change if the outside rolling diameter is larger (or smaller) than stock, regardless of tyres width.
When you get wider tyres, in turn you get appropriate smaller profiles to keep outside diameters the same, keeping speedo accurate.
